Oatmeal Chocolate Chip Cookie Bars

Oatmeal Chocolate Chip Cookie barsThis is one of our family’s absolute favorite recipes.  I love sending these cookies to friends who are far away because they stay fresh so long and don’t fall apart during shipping.  In fact, the batch we made today for this post is going to my sister who just had a sweet little baby girl!

Ingredients

Instructions
  1. Soften the butter
  2. Mix in honey granules and sucanat (or sugar and brown sugar).
  3. Add eggs.
  4. Add vanilla extract.
  5. Mix together.
  6. Add flour, baking powder, baking soda, and salt.
  7. Mix together.
  8. Add oats.
  9. Add chocolate chips and mix together.
  10. Spray a 9x13 inch dish with cooking spray or coat with butter. Spread cookie dough into dish. Bake at 375 for 20-25 minutes. (Just look at that cute little one year old finger trying to snag some cookie dough. So cute.)
  11. Let cookies cool, cut, and enjoy!
Recipe Notes

*For a gluten free version of this recipe just substitute oat flour.  It works great and tastes exactly the same.  If you have a mill simply use oat groats to make flour instead of wheat.  If not, look for oat flour in your health food store or on line.  Here is one of many oat flour products on the market.
