We recently started getting produce from our new CSA (Community Supported Agriculture). This week kale was in our delivery. Everyone in our family knew exactly what that kale would be used for….our all time favorite Crisp Kale Salad! Seriously, we could taste the crispy, sweet, crunchiness before we even got the produce home.
This recipe is almost impossible to mess up. Feel free to switch out greens, add nuts, leave out the craisins, change up the dressing. Really it’s one of those that you can just play around with and add whatever you have on hand. Note: the amounts I wrote in the ingredients list are for a standard size recipe. But when we made this today we made about six times that amount. I mean, c’mon, there’s ten of us. The standard size recipe would last about 2 minutes in our house!
- 1 cup kale
- 2 cups mustard greens (or collard greens)
- 1 apple (I used granny smith)
- 1 green onion
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 Tbsp. honey
- 1 Tbsp. dijon mustard
- 1/4 cup craisins
- pine nuts or walnuts (optional)
- Finely chop the kale and mustard greens.
- Add chopped green onion. This is a great job for a kid. My eight year old was helping today.
- Add chopped apple and craisins.
- Whisk together balsamic vinegar, olive oil, honey, and dijon mustard for the dressing. Adjust amounts to taste.
- Toss everything together with the dressing and enjoy! Note: you may not need all the dressing.
